The Menu

1st Pear & pecorino salad
Roasted pear, shaved pecorino, mixed greens, toasted walnuts, white balsamic vinaigrette.

It’s no secret that blind tasting is hard. Even expert tasters regularly confuse classic wines based on similarities in winemaking and place of origin.

Time: 6:30 PM to 9:00 PM

Location: Vintage Conservatory, 224 King St West, 4th Floor

You’ll be greeted by a growers Champagne to get the evening of discovery started. This will come with a discussion of the world of sparkling wine and how to find traditional method sparkling that punches above its weight.

We’ll then look at a duo of white wines that show how we can use insights on winemaking and terroir to find new wines that capture the essence of our favourite classics like Chablis.

With our pair of red wines we’ll look at the history of Bordeaux and Southwest France to find the hidden values within the category. We’ll pinpoint some ways you can use this historical knowledge to continue drinking and enjoying the wines of Bordeaux without worrying about buying en-primeur or breaking the bank on 1st growth wines.

Our wine discovery will be guided by a 3-course meal provided by the award winning chefs of the Vintage Conservatory. At the end of this session you will walk away with:

1 A deeper understanding of how to navigate the world of Champagne and other traditional method sparkling wines;

2 A deeper understanding of Chablis and wines that fit that category from adjacent areas;

3 An understanding of how to get the most out of Bordeaux, and adjacent options.

This session will be led by Master Sommelier Candidate and wine instructor, Nabilah Rawji of Somm Factory.
